Method

  • Gently pan fry together in vegetable oil 'til soft, the onion, red pepper and garlic. Make a vegetable stock in a saucepan using 1/2 pint of water and add the chilli powder,cornflower and tomato paste stirring in. Add the fried onion/garlic to the saucepan.
  • Adding the rest of the ingredients,and make up to 2 pints with extra water, stir gently and heat until simmering.
  • Serve with hot garlic bread
  • Ingredients

    • 1 medium onion. chopped
    • A little vegetable oil
    • Tspn mild chilli powder
    • 1 vegetable stock cube
    • 1 cup boiled sweetcorn
    • 1 crushed garlic clove
    • 1 450g can mixed beans in tomato sauce
    • 2 tblspn's Tomato paste
    • 1 tblspn cornflower
    • ½ Sliced Red Pepper
