Casserole hen in very slow oven until really tender. Leave until cold. Take meat off bones. Roll in seasoned flour.
Fry in equal parts butter and oil.
Place in casserole.
Fry mushrooms and onions. Add to casserole.
Add flour to fat and mix, add stock, tomato puree and wine. Mix. Pour over contents of caserole and cook in moderate oven for 1 hour.
