Lemon & Ginger Mess

Method

  • 1) Prepare the lemon zest and juice and set aside. Crush the ginger biscuits until they are a mix of breadcrumbs and larger crunches and set aside also grate some Green & Blacks honeycomb or ginger dark chocolate (enough to sprinkle)
  • 2) Whip the zest and juice of the lemon together with the cream until thick and double in size (soft peaks)
  • 3) Add the icing sugar to taste and swirl in the ginger crumbs
  • 4) Spoon into cocktail glasses and sprinkle some of the grated chocolate and left over lemon rind to decorate.
  • Tips

    • You don't have to use Green & Blacks dark chocolate, you could use any good high cocoa chocolate. I use it as we had a surplus from our wedding favours a few years ago and haven't used anything else since. If you use the best looking or fancy glasses it makes the lemon mess look even more moorish.

    • 5 ginger crunch biscuits
    • 450ml double cream
    • 25g icing sugar. sifted
    •  Green & Blacks dark chocolate to grate

    This is a great after dinner hit. I have on occasion pulled this off as a planned dessert, as it takes less than 10 mins from start to finish and is always a crowd pleaser.
