Method

1. In a LARGE bowl, whisk the cream, vanilla essence and icing sugar together, until it forms soft peaks.

2. Add the jam, meringue and 3/4 of the raspberries.

3. Divide the mix between 4 serving glasses, top with the remaining raspberries and chill.

4. Enjoy this easy recipe!

I made this tonight for my sweet-toothed partner! It went down very very well. I melted some dark chocolate to drizzle down the serving glass and over the top, finished it off nicely!

1 punnet fresh raspberries
2 tbsp Raspberry Jam
300ml Whipping Cream
1 tsp Vanilla essence
2 heaped Tsp icing sugar. sifted
4 roughly crushed meringue nests.
