Salmon with Drambuie and Mango Sauce

Ingredients

  • 3 tablespoons olive oil
  • 4 fillets of boned salmon
  • 15oz canned mango or 2 fresh diced
  • 2 teaspoons sunflower oil
  • 1 clove garlic crushed
  • 75ml (5 tablespoons) Drambuie
  • 1 teaspoon soy sauce

Method

In a frying pan heat 2 tablespoons of the olive oil, add salmon and gently fry for 8-10 mins, turning occasionally, until cooked.
Puree the canned of fresh mango with the sunflower oil. In another pan heat the remaining olive oil, gently fry the garlic to release the flavor, then add mango puree. Drambuie and soy sauce and heat through.
Pour the sauce into the frying pan over the salmon and allow to simmer gently for five mins. Serve with asparagus and new potatoes with lots of butter.
