Cheesy Cauliflower & Brocolli Soup
Ingredients
- 1 tbsp Sunflower oil
- 1 Onion
- 12oz/350g Brocolli Florets
- 1oz/25g Plain Flour
- 2 tbsp Milk
- 7oz/200g Cream Cheese (eg Phil)
- 4oz/115g Mature Cheddar Cheese grated
- Salt
- Pepper
- 2 Pints/1.1 litres Vegetable Stock
Method
- 1. Heat oil and soften onion.
2. Add cauliflower, brocolli and stock.
Cook for 5 - 10 mins.
3. Blend flour and milk to a completely SMOOTH paste.
4. Add to the cauliflower and brocolli mixture.
5. Add the cheeses and stir until well blended and thickened.
6. Adjust seasoning and serve.

reallynice and fun to make, you need to make sure you bring to the boil once cream cheese is added othewrwise you get lumps of it left in.

Thanks for sharing, I just tasted cheesy cauliflower soup this noon. A little bit sour, is that soup from your recipe? or chees makes the soup tasted like that?
