Method

  • Cook rice in water with the veg stock cubes crumbled in, for 14 minutes.

  • While rice is cooking chop red pepper, garlic, chicken and bacon.

  • Fry bacon until slightly crispy, then add red pepper, garlic, sweetcorn, peas and chicken.

  • Add veg mixture to the drained rice and add the soy sauce if using.
  • Tips

    • Can be eaten hot or cold...good for lunch boxes.

    Ingredients

    • 140-150g (dried weight) long grain rice
    • 2 vegetable oxo cubes
    • 1 red pepper. diced
    • 70g (about ½ a small can) sweetcorn, drained
    • handful peas (fresh or frozen)
    • 1 clove garlic, crushed
    • 100-150g Cooked chicken diced
    • 2 Bacon Rashers. Chopped
    • 1-2 tbsp soy sauce (optional)
