Method
Cook rice in water with the veg stock cubes crumbled in, for 14 minutes.
While rice is cooking chop red pepper, garlic, chicken and bacon.
Fry bacon until slightly crispy, then add red pepper, garlic, sweetcorn, peas and chicken.
Add veg mixture to the drained rice and add the soy sauce if using.
Tips
- Can be eaten hot or cold...good for lunch boxes.
Ingredients
- 140-150g (dried weight) long grain rice
- 2 vegetable oxo cubes
- 1 red pepper. diced
- 70g (about ½ a small can) sweetcorn, drained
- handful peas (fresh or frozen)
- 1 clove garlic, crushed
- 100-150g Cooked chicken diced
- 2 Bacon Rashers. Chopped
- 1-2 tbsp soy sauce (optional)
