Method
Melt fat, add flour, cook 2/3mins. Add stock and bring slowly to boil. Add milk, chopped mushrooms, seasonings. Simmer for 10 minutes.
Cool slightly and then blend. Taste for correct seasoning and if a little thick add a little more stock.

- 50gm plain flour
- 20fl oz stock
- 10floz milk
- 250gm mushrooms
