Prepare the vegetables you're going to mash and stick them on to boil for 15mins or until tender. Mash them lightly with/out butter, salt and pepper as you prefer. Leave the lumps cos they're tastier like that.
Meanwhile, slice the celery, carrots and leeks into chunky slices, and the chicken breast (if using) into big cubes. Fry the leeks and chicken first for a few minutes and then add the carrots and leeks. Continue frying for a couple of minutes and then add your Bisto and stock. Stick a lid on it and leave it while you watch Neighbours - so 25 mins works a treat. Before you leave it, stick the oven on to 175degrees to preheat.
After Neighbours, stick the vegetables and chicken mixture into a large ovenware dish and top with the mashed potato. Sprinkle generously with the cheddar and bung it in the oven for 35-45 mins.
Serve on its own or with other veg. It's great and I love it!

I made this as a vegetable pie first when my chap and I had stinking colds and felt miserable and in need of comfort food. Since then, I've made it with and without chicken reguarly. My father, who loathes chicken, has not only said it was great and tasty, but said he would eat the chicken version again - oh such success!
