Prep:
Bring large pan of water to boil.
Chop vegetables
Slice bacon into thin slices
Cooking:
Add pasta to pan and cook as per instructions (approx 12 mins for dried pasta)
Heat small amount olive oil in a non-stick pan
Fry the onion and garlic until soft
Add peppers and bacon and cook further 5 mins
Add mushrooms and cook through
Add cream and heat through
Add black pepper to taste
Drain pasta and toss in sauce
Serve immediately with Garlic Bread ro French stick.
For a healthier option, dry fry, use extra lean bacon and use a low fat cream alternative such as Elmlea Single Light.
