Quick Mexican Soup

Ingredients

  • 2 cans of tomatoes
  • 1 large can sweetcorn
  • 1 jar enchilada sauce
  • 1 pint beef stock

Method

put tomatoes,sauce and corn into a blender (save 2 dessert spoons of corn to add later),blitz until smooth, add to a large saucepan over medium heat, add beef stock until you get your required consistency,add the rest of the cornand heat for 5 mins,serve with crusty bread or grilled flour tortillas, you can use veg stock for a veggie option or add some finely diced beef to bulk the soup up.
