Method

  • 1. Crush the cherries, complete with stones and add the cinnamon and cloves and leave in a glass or earthenware vessel for several hours.

  • 2. Strain through a sieve to remove the stones.

  • 3. Stir in sugar, wine and water.

  • 4. Serve chilled.
  • Tips

    • This soup can also be made by replacing the red wine with 750ml thin sour cream.

    Ingredients

    • 2.25l Cherries
    • 300ml red wine
    •  cinnamon, pinch
    • 450ml water
    • 2-3 cloves, crushed
    • 300g sugar
