Orange Water Ice in Orange Shells

Method

  • Mesaure sugar and water in to saucepan and stir over low heat till dissolved. Boil and simmer for 5 minutes. Draw pan off heat. Add concentrate orange juice and allow to cool.
  • Whisk egg white till stiff. Stir into cool syrup. Pour into 2 ice trays and freeze till almost firm. Scoop out into small basin. Using hand whisk ,beat till light and smooth. Return to trays and freeze until firm. (Overnight)
  • Prepare oranges.
  • Slice off tops and reserve; scoop out oranges flesh onto pan, work fingers round shells between rind pith. Leave shells quite clean.
  • Put shells in freezer to chill. Fill with prepared ice.
  • Remove flesh from lids and re-cover oranges. Freeze for several hours. Put into polythene bag and keep in freezer. Serve straight from freezer.

    • 4 oz castor sugar
    • ½ pt. water
    • 1 can frozen orange juice concentrate
    • 1 egg white
    • 8 small oranges
