Mesaure sugar and water in to saucepan and stir over low heat till dissolved. Boil and simmer for 5 minutes. Draw pan off heat. Add concentrate orange juice and allow to cool.
Whisk egg white till stiff. Stir into cool syrup. Pour into 2 ice trays and freeze till almost firm. Scoop out into small basin. Using hand whisk ,beat till light and smooth. Return to trays and freeze until firm. (Overnight)
Prepare oranges.
Slice off tops and reserve; scoop out oranges flesh onto pan, work fingers round shells between rind pith. Leave shells quite clean.
Put shells in freezer to chill. Fill with prepared ice.
Remove flesh from lids and re-cover oranges. Freeze for several hours. Put into polythene bag and keep in freezer. Serve straight from freezer.
