1. Prepare the garlic butter by putting all the ingredients in to a small bowl and mixing well. Set aside for using later.
2. Slice the chicken breasts in half horizontally without cutting all the way through, open each breast like a book.
3. Spread a heaped teaspoon of the garlic butter on to the inside of each breast leaving about 1cm around the edge to prevent the butter squeezing out when the breasts are folded back together.
4. Fold each breast back together and use fingers to press the edges down ensuring the breasts don't come apart.
5. Cover each breast firstly by coating in flour, then in egg, then in the breadcrumbs (breadcrumbs if not shop bought are made by toasting the bread and by either grating or blending the toast to create a consistent crumb).
6. When each breast is fully coated, place them on a greased baking tray for 30 minutes at 200c.
Tip: Serve with potatoes of any kind and vegetables/salad.
