Rosemary and Thyme Potatoes
Method
1. Par boil the chopped potatoes in salted water (about 10 minutes).
2. Drain the potatoes and pour in to an ovenproof dish along with the wedges of onion.
3. Coat the potatoes and onion in olive oil, rosemary, thyme, salt and pepper.
4. Bake in the oven for 30 minutes at 200c.
Quick and easy accompaniment for a main course!
Ingredients
- 4 large potatoes. peeled and chopped into chunks
- 2 tbsp rosemary (fresh/dried)
- 2 tbsp thyme (fresh/dried)
- 2 tbsp olive oil
- 2 small red onions. cut into thick wedges
- Pinch salt and pepper
