Method

  • 1. Par boil the chopped potatoes in salted water (about 10 minutes).

  • 2. Drain the potatoes and pour in to an ovenproof dish along with the wedges of onion.

  • 3. Coat the potatoes and onion in olive oil, rosemary, thyme, salt and pepper.

  • 4. Bake in the oven for 30 minutes at 200c.

  • Quick and easy accompaniment for a main course!
  • Ingredients

    • 4 large potatoes. peeled and chopped into chunks
    • 2 tbsp rosemary (fresh/dried)
    • 2 tbsp thyme (fresh/dried)
    • 2 tbsp olive oil
    • 2 small red onions. cut into thick wedges
    • Pinch salt and pepper
