Chocolate Pudding

Method

  • 1. Mix the sugar, cornflour, salt and cinnamon together.
  • 2. In a large heavy based saucepan and slowly whisk in the milk and cream.
  • 3. Add the butter and chocolate and set over medium heat.
  • 4. Cook until the chocolate melts and the mixture thickens, whilst whisking frequently.
  • 5. Bring the pan to boil and boil for 1 minute.
  • 6. Remove pan from heat.
  • 7. Beat the egg and vanilla extract in a small bowl or mug.
  • 8. Stir into the chocolate mixture and continue whisking to prevent lumps from forming.
  • 9. The mixture will be thick.
  • 10. Remove from heat.
  • 11. Pour the pudding into ramekins or tea cups and cool.
  • 12. Cover and put in the fridge.
  • 13. They should be set in 2 hours or leave overnight.
  • 14. Top with whipped cream and chocolate shavings.

    • 175g caster sugar
    • 30g cornflour
    • ¼ tsp salt
    • ¼ tsp Ground Cinnamon
    • 375g milk
    • 125ml whipping cream
    • 55g butter (cut into peices)
    • 90g plain chocolate (chopped)
    • 1 egg
    • 1 tsp vanilla extract
