Pour sherry into shallow dish. Place cream and top of milk in bowl and whisk until just thick. Dip both sides of biscuits, one at a time, into sherry and sandwich togethet with cream, making a long roll. Wrap the roll firmly in foil and leave in fridge overnight, or put in freezer for as long as desired. Unwrap roll and cover with chocolate vermicelli. To serve, cut the roll diagonally.
