Method

  • Slice sausage into 30mm/1/4 inch slices,

  • In hot skillet, frying pan or heatproof earthenware dish sear chorizo in hot olive oil each side until dark brown.

  • Add enough cider to just about the hight of the chorizo and reduce until liquid has turned to syrup.
  • Ingredients

    • 1 chorizo sausage
    • 3 tblsp olive oil
    • 1 cup cider
