Carol's Italian Tomato Soup
Method
Ingredients
- 2 tbsp Extra virgin oilve oil
- 2 large garlic cloves. crushed
- 1 large onion. chopped
- 900g/2lb ripe vine tomatoes . deseeded and chopped
- 425ml/15floz vegetable stock
- salt and pepper
- 4tbsp fresh basil. chopped
- 4tbsp mascarpone
- Fresh Basil Leaves to Garnish
- fresh ciabatta sliced
- mozzarella. thinly sliced
