Rigatoni Pasta with Salmon and Ricotta

Method

  • 1. Cooked the pasta in boiling water.

  • 2. Steam or grill the salmon fillets.

  • 3. Spray a nonstick frying pan with oil and heat.

  • 4. Add the onion, celery and zucchini and cook over medium heat, stirring occasionally,until soft.

  • 5. When the pasta is al dente, drain and return to the pan.

  • 6. Gently break the salmon apart with a fork and add to the pasta along with the vegetables.

  • 7. Crumble the ricotta over the pasta and add the dill.

  • 8. Season with pepper and a squeeze of lemon juice. Toss to combine thoroughly, and serve immediately.

    • CAPERS
    • 500g Rigatoni
    • 2 Salmon fillets
    • spray of Olive oil
    • 1 Red onion, finely chopped
    • 3 stalks Celery, finely sliced
    • 2 Zucchini, sliced
    • 200g Low-fat ricotta cheese
    • 2 tsp. Fresh dill, chopped
    • 2 tbsp. Lemon juice
    • to taste Salt and pepper

    Lovely and healthy pasta dish. Great for light dinner or before sport.
