In a seperate bowl beat egg whites until stiff and set aside.
In a seperate bowl beat egg yolks well and add caster sugar and oil.
Add water and cocoa to egg yolks and beat well.
Add flour, baking powder and vanilla and pinch of salt.
Fold in egg whites.
Place into pregreased baking tin and bake at 190degrees for 25 - 30 minutes.
Icing:
Combine all the ingredients and beat well. For chocolate icing add the cocoa and options.
Tips
This cake comes out quite small so I usually double the recipe (picture shows double recipe), However, do not double the caster sugar quantity as it comes out too sweet. I would rather use 11/2 times the sugar quantity.
