Method

  • Combine boiling water and cocoa powder & options.
  • In a seperate bowl beat egg whites until stiff and set aside.
  • In a seperate bowl beat egg yolks well and add caster sugar and oil.
  • Add water and cocoa to egg yolks and beat well.
  • Add flour, baking powder and vanilla and pinch of salt.
  • Fold in egg whites.
  • Place into pregreased baking tin and bake at 190degrees for 25 - 30 minutes.

  • Icing:
  • Combine all the ingredients and beat well. For chocolate icing add the cocoa and options.
  • Tips

    • This cake comes out quite small so I usually double the recipe (picture shows double recipe), However, do not double the caster sugar quantity as it comes out too sweet. I would rather use 11/2 times the sugar quantity.

    • 250ml/½cup self raising flour
    • 10ml baking powder
    • 60ml cocoa powder
    • 60ml options
    • 250ml caster sugar
    • 125ml vegetable oil
    • 125ml boiling water
    • 4 Eggs Separated
    • 5ml Vanilla essence
    • ICING
    • 1cup icing sugar
    • 125g Butter
    •  water
    • 2tsp Condensed Milk
    • 3tbs cocoa powder/options
