Method

  • Line dish with baby leaf spinach. (Can use other leaves - I often add butter lettuce.) Throw all other ingredients over salad leaves.
  • Dressing: equal parts of oil, sugar and vinegar - whisk well in blender. Pour over salad when ready to serve.

    • 1 tin lychees
    • 1 tin artichoke hearts
    • 1 tin palm hearts
    • 1 punnet sliced mushrooms

    • FOR THE DRESSING
    • 1/3 cup oil
    • 1/3 cup vinegar
    • 1/3 sugar
