Method

  • Line a 320mm x 230mm x 15mm deep (9"x 13"x 3/4")baking tray with pastry. Soft fry the Onions, Garlic and add half the Thyme. Spread half the Onion mix on the pastry lining. Spread the Sundried tomatoes ontop. Slice and spread the par boiled Potatoes. Spread the remaining Onion mix.
  • Beat together the Cream, Eggs and Mustard. Pour equally over the filling. Cast the rest of the Thyme ontop and bake in a pre heated ( Fan oven 200c) (probably 220c gas oven) for about 20 min's Keep your eye on it, Golden Brown is the ideal colour when cooked.

  • Mix the Salt and the Flour. Add the Butter using your fingert tips to rub until the mix resembles bread crumbs. Add the Lemon Juice to the iced water and add enough gradually to make a stiff dough. Cool in the fridge for a couple of hours and roll out to fit the tray.

  • Serve with a Salad and Allioli Spanish garlic dip

    • THE FILLING
    • 300g par boiled salad potatoes
    • 300g Red onions thinly sliced
    • 2 garlic cloves crushed
    • 3 tbsp fresh thyme
    • 10 sundried tomatoes. roughly chopped
    • 2 large eggs
    • 150ml Creme Fraiche
    • 2tbsp Wholegrain Mustard
    • SHORTCRUST PASTRY
    •  Ready Rolled

    • 280g plain flour
    • ½ tspn salt
    • 125g cold butter. cut into cubes.
    • 100ml Iced Water
    • 1 tspn Lemon juice
