Crackler Cheddar Cheese and Chive Mayonnaise

Method

  • Place the egg yolks into a food processor with the Crackler cheese, mustard, vinegar and chives. Blend for 1 minute and then slowly pour in the oil whilst the processor is going. When all the oil is incorporated stop the blender and add a little salt to taste. Remove the mayonnaise from the processor and transfer to a container and refrigerate. This mayonnaise can be used for dips and salads and the herb can be changed to your choice.

    • 3 Free range egg yolks
    • 50g Davidstow Crackler Chedder cheese (grated)
    • 2tsp English Mustard
    • 1tbsp Cider vinegar
    • 50g Chives chopped
    • 500ml Sunflower oil
    • Sprinkle Cornish sea salt
