Beaconhill Bites - Low Fat Rich Chocolate and Hazelnut Cookies

Method

  • Pre-heat the oven to 180°C. Melt the chocolate in a bowl over simmering water or in the microwave. Leave to cool a little.
  • If your hazelnuts are whole, put them in a small plastic bag and bash them with a rolling pin. (NB if they have skins on, place on a baking tray in the oven at 200C for 10 minutes, cool, and rub off the skins).
  • Whisk the egg white to soft peaks. Little by little, add the cream of tartar and sugar, and fold in.
  • Add the chocolate, nuts, vanilla extract and cocoa powder. Fold in until well combined.
  • Line a baking tray with baking parchment. Place teaspoons full of the mixture onto the parchment, about 3cm apart. As the mixture is quite thick, if you prefer you can roll little balls and then flatten slightly.
  • Bake for 8 - 10 minutes at 180C - until dry and slightly cracked on top. Leave to cool for a couple of minutes before transferring to a wire rack to cool completely.
  • Great with a cup of tea any time, and a perfect after dinner mouthful with coffee.
  • Tips

    • Great for using up egg white(s) when you don't want meringues!

      They keep well in a tin for a couple of days, if needed!

    These are surprisingly not-so-naughty, but very very nice! Really rich and chocolatey, so definitely for dark chocolate lovers. Low calorie - no butter!
