1. Steam potatoes till soft, rub through
sieve.
2. Return to clean, dry pan and place over a
low heat.
3. Stir continuously with wooden spoon until
mixture is thoroughly dried out and stiff.
4. Remove from heat, beat in butter, egg
yolks and season to taste.
5. Pipe into shapes.
6. Refridgerate until needed.
7. Brush with egg glaze and bake.
