A good tip for using up a spare egg white or two!
Ingredients
- 100 g Ground almonds
- 50 g Caster sugar (normal or golden)
- 1 tsp Orange zest (½ orange or whole orange if you want to increase orange flavour)
- 1 Egg white
- 10 - 15 g Flaked almonds
Method
- Preheat oven to 180 C.
- Beat the egg whites with a fork for about 30 seconds, to make them frothy - they don’t need to be whisked, like meringues.
- Mix together the sugar, ground almonds and orange zest, then add the egg white and bring together into a dough. It will look and feel like soft marzipan.
- Roll the dough into a sausage shape and cut into 12 pieces. Roll each piece into a ball and flatten slightly, then place on a baking tray lined with baking parchment. Press a few flaked almonds into each one.
- Bake in the oven for 10 minutes until just beginning to turn golden. Leave to cool on the baking tray.

- 175 grams self raising flour
- 1 pinch of salt
- 50 grams ground almonds
- a few drops of almond essence
- 150 grams of margarine
Method
- Heat the oven to 180 degrees.Grease the baking trays. Mix together the dry ingredients and rub in margarine. Add the almond essence. Mix with hands and bring together. Roll out thinly and cut into shapes. Bake for 15 minutes.

- 6 oz self raising flour
- pinch salt
- 3 oz caster sugar
- 2 oz ground almonds
- 5 oz margarine
- few drops almond essence
- blanched almonds
Method
- 1. Heat oven to 180c / 350 F/ Gas 4 and grease 2 baking trays
- 2. Mix together the dry ingredients and rub in the margarine
- 3. Add the essence and mix well bringing together with your hands
- 4. Roll out thinly and cut into rounds. Place half a blanched almond in the centre of each one
- 5. Place on a baking tray and bake for 15 minutes
- Makes approx 20 biscuits
