    Ingredients

    • 2 cooking apples. peeled. cored and sliced
    • 4 oz sultanas
    • 6 oz butter. softened
    • 12 oz self raising flour
    • 2 tsp mixed spice
    • 4 oz brown sugar
    • 2 oz caster sugar
    • ¼ pint milk
    • 1 egg beaten
    • 2 oz demerara sugar

    Method

    1. Heat oven to 180 C. Grease and line a cake tin or pirex dish.
    2. Put the butter, brown & caster sugar, mixed spice and egg into a bowl and whisk together (an electric whisk is best) slowly add the flour and milk alternately keep wisking.
    3. Add the chopped apples and sultanas. Should be a gooey, dropping consistency. If too stiff add a drop more milk.
    4. Pour into baking dish. Sprinkle with Demerera sugar. Bake for approx 1 hour to 1-1/4 hours.
    5. Serve hot with custard or cold as a cake

        When I saw that there was more butter than flour I was dubious, but went with it any way. However - when I took it from the oven the cake was oozing fat and had barely risen Usually my cakes work out pretty ell, so very disappointed

        This looks very good. Why do you leave the mixture sitting for 30 minutes ? and what would happen if you cooked it straight away ? Does the baking powder not start to work as soon as you add wet ingredients. I am dying to try this but I was always told as soon as you add wet ingredients to a mixture with baking soda then it starts to react. Thanks

        I loved it and surprisingly so did my wife (she doesn't usually like apples in things)

        She asked if I would make it a regular in my repertoire. I am chief cook and bottle washer as my wife is wheelchair bound.

        Was it supposed to be a bit puddingy?

        This was wonderful! I was surprised how well the calvados made its presence felt. I'm going to try adapting it with no alcohol and perhaps with other fruit liqueurs brought back from holidays.

        It's certainly going to become one of my tried and trusted favourites so thank you very much.

        You should also put some brown sugar and vanilla extract on the apples pieces before adding them to the mixture!

        Hi Jade, In France we have baking powder in small packet. 1/2 packet corresponds to 2 tsps.

        This sounds delicious just concerned about amount of baking powder how much is half a packet?

      Ingredients

      • 170g Butter
      • 4 Eggs
      • 170g Icing sugar
      • 60g Apricots jam
      • 165g Flour
      • 2 tsp Baking powder
      • at least 4 Apples (Granny)
      • 4 tablespoons Calvados (apple liqueur)
      •  brown sugar
      • 1 tsp vanilla essence

      Method

      1. Peel the apples and remove the hearts
      2. Cut them into cubes and sprinkle with some brown sugar and a few drops of vanilla essence

      3. Put the butter, the icing sugar, the calvados and the jam into a big bowl. Beat together with a wooden spoon and add the eggs one by one.

      4. Add the flour, the baking powder and the apples. Beat the mixture.

      5. let the dough stand 30 minutes.

      6. Preheat oven to 210°C.

      7. Grease and line the base of a rectangular cake tin.

      8. Put mixture in the cake tin.

      9. Bake for about 5 minutes at 210°C and then 40 minutes at 150°C.

      10. Take out of the oven and leave to cool before removing form the tin.

      11. This cake is great served with a generous spoon of creme fraiche.

        Ingredients

        • 1 apple
        • 3 oz (85 g) self-raising flour
        • 1,5 oz (40 g) soft butter
        • 3 oz (85 g) brown sugar
        • 1 egg
        • 3 tbsp milk
        • 1 tbsp lemon juice
        •  pepper
        •  salt

        Method

        1. Peel the apple and cut it into quarters.

        2. Slice 1 quarter finely (this is for the topping). Chop the rest of the apple into bite-size pieces.

        3. Combine the egg, soft butter, lemon juice, brown sugar and milk in a bowl. Season with a pinch of pepper and salt. Stir well. Sift the flour over it and gently fold it in.

        4. Add the apple chunks. Stir well into a silky batter.

        5. Oil a springform tin and pour in the batter and spread it equally using a spoon. Top with the sliced apple.

        6. Bake the apple cake 25 minutes in a preheated oven at 356°F (180°C). Remove from the oven and let the cake cool down in the tin. Sprinkle with icing sugar.
