Tips
Use Bramley apples for this if possible. If you're not in the mood to make the pastry from scratch you can get passable results using a ready made short crust pastry instead.
Ingredients
- FOR THE PASTRY
- 10 oz plain flour
- 4 oz vegetable shortening/lard cubed
- 2 oz butter cubed
- ¼ tspn salt
- 5-6 tbspns iced water
- single cream to glaze
- FOR THE FILLING
- 2 lb cooking apples(peeled,cored thickly sliced)
- 6 oz granulated sugar
- 1 tspn ground cinnamon
- ¼ tspn ground allspice
- ¼ tspn ground nutmeg
- 1 tbspn cornflour
- 1 oz butter
- 1 tbspn lemon juice
Method
- 1 Sift flour & salt into a large mixing bowl,add cubed
- vegetable shortening/lard & butter.
- 2 Rub the fat into the flour,until it resembles fine
- bread crumbs.
- 3 Add iced water,a little at a time,stirring with a knife
- until firm but not sticky.
- 4 Knead until smooth ,then wrap in cling film or foil &
- place into fridge for 30 mins.
- 5 Prepare filling - Blend sugar,cornflour & spices in a
- large bowl then add apples & lemon juice & mix until
- covered.
- 6 Preheat oven to 190 deg C.
- 7 Grease a 9"-deep pie dish with a little butter.
- 8 Remove pastry from the fridge & divide into half
- 9 On a floured board roll out 1 half of the pasty into
- a circle large enough to line the pie dish.
- 10 Ease the pastry into the dish,and trim.
- 11 Fill the pie with the apple mixture,making sure it's
- higher in the middle,then dot with butter.
- 12 Roll out the 2nd half of the pastry to make the lid.
- 13 Lay over the filling,trim to size,then crimp the
- edges together.Brush with cream & cut 2 or 3 slots
- to let out the steam.
- 14 Bake in the centre of the oven for 40-50 mins,until
- golden & the apples are cooked,
- 15 Serve warm,wth a large dollop of vanilla ice cream

- 700g Bramley apples. peeled. cored and sliced
- 80-125g soft brown sugar
- 1 grated rind and juice of orange
- 1 tsp. mixed spice
- 1 tbsp. plain white flour
- 25g butter
- FOR THE CRUST
- 6 oz prepared short crust pastry
- 1-2 tsp. caster sugar
Method
- 1. Preheat the oven to 200C/400F/Gas6, 15 minutes before baking the pie.
- 2. Mix together the sugar, grated orange rind, mixed spice and flour.
- 3. Place a third of the apple slices in the base of a 1.2 litre deep pie dish and sprinkle with half the sugar mixture. Cover with half the remaining apples and sugar then arrange the rest of the apples on top. Pour the orange juice over.
- 4. Cut the butter into small pieces and dot over the apples.
- 5. Roll the pastry out on a lightly floured surface about 4cm larger than the pie dish. Cut out a 1.25cm strip. Dampen the edges of pie dish with a little water then place the thin strip on the pie dish edge. Dampen the pastry edge then place the pastry lid in position. Press the edges firmly together. If you like, any pastry trimming can be used to decorate the top.
- 6. Brush the pastry with a little water and sprinkle with caster sugar. Bake in the preheated oven for 15 minutes then reduce the temperature to 180C/350F/Gas4 and continue to cook for 30 minutes or until the pastry is golden brown. The pie can be sprinkled with a little more sugar after baking if you wish.
- 7. Serve warm with cream, custard or ice cream.
- Variations
- 1. Replace the grated orange rind with 2tsp of ground cinnamon, add to the soft brown sugar and flour.
- 2. Add about 2-3 whole cloves to each layer of apples in the pie dish.
- 3. Add 80g/3oz cut mixed peel to the apple layer.

- 100g block margarine
- 1 jar chopped apple

Method
- 1.Add your flour and margarine and rub them intill breadcrumbs
- 2. Add your water and then mix and kneed untill a dough is achieved
- 3.Roll out the dough
- 4. Split the dough in two approx 2/3 to 1/3.
- 5. Take the larger piece and fit in your pie plate.
- 6. Now add your your filling
- 7. Use the remaining rolled out dough for the top of your pie.
- 8. Seal the edges by pressing round the rim of your pie with the back of a fork
- 9. Pierce the center of the top of the pie to release steam when cooking.
- 10 Place in a hot oven and cook till goilden brow.
