      this bread is yummy we just started eating it warm out of the oven- yum! i also made a gluten free version with gluten free flour for my mother in law who is a coeliac and it turned out good too.

      nice and moist only problem my son and husband have eaten it all
      I used a 25 cm loaf tin which was just right
      i would use this recipe again
      its a great way to use up bananas that are very ripe, I would say from experience its not worth doing with green bananas or very firm ones

      This recipe was great! I added an extra bananna and have added nuts to alternate it a bit. Great!!! Was a great hit with the kids.

      I made this dish because I had bought some brown sugar I needed using up and a few bananas going over-ripe. This recipe is really easy to make and tastes great - was a big hit with my family.

      This is a very easy recipe -And the Kitchen smells wonderful . Plus very tasty dish

    Ingredients

    • 4 oz Butter
    • 8 oz Self Raising Flour
    • 4 oz Soft Brown Sugar
    • 6 oz Raisins
    • 2  eggs
    • 2 tblspns Honey
    • 3 Bananas

    Method

    1. 1. Rub butter and flour together until breadcrumbs.
    2. 2. Add sugar and raisins. Give a stir.
    3. 3. Beat eggs. Spoon out honey and stir in.
    4. 4. Mash Bananas and add to mixture.
    5. 5. Give it a good stir.
    6. 6. Grease loaf tin.
    7. 7. Pour in ingredients & cook at 180oc/350f for 1 hour.
    8. 8. Check to see if cooked (put skewer in and if it comes out clean it's ready!)
    9. 9. Turn out bread and leave to cool.
    10. 10. Eat and enjoy!!!

        Very nice flavour, eating a piece now! Only cooked mine for 1hr 15mins and it was well done so ovens may vary.

        This is a fantastic little recipe!! I have made the loaf many times now. Its easy for the children to make, we eat it all week long nevermind just at the weekend.

      Ingredients

      • 225g/8oz self-raising flour
      • 100g/4oz butter
      • 150g/5oz caster sugar
      • 450g/1lb bananas (the softer the better) peeled and mashed
      • ½ tsp salt
      • 2 eggs
      • 175g/6oz mixed dried fruit

      Method

      1. 1. Pre-heat the oven to 180°C/350°F/Gas 4.
      2. 2. Mix all the ingredients except the dried fruit together. You can do this in a food processor or by hand in a bowl.
      3. 3. When they're all thoroughly mixed, add the dried fruit. Spoon the mixture into a 1kg/2lb non-stick loaf tin, spread out evenly and bake for one and a half hours. The loaf is done when a skewer pushed into its middle comes out clean.
      4. 4. Cool on a wire rack, then slice before serving
      5. 5. Serve thickly sliced with a dusting of icing sugar, or wrap in foil and warm gently in the oven before slicing and serving with fresh bananas for an ideal weekend breakfast.

        Tips

        This is just delicious served warm and fresh out of the oven with a light spreading of butter. Not terribly healthy or slimming I know but hey..... give it a go!

          What a great idea. I do find that if you do not grease the cake ting properly the bread can stick when trying to get it out. I gues with the greaseproof paper or the loaf liners this is almost impossible. Thanks i' will give this a go.

          I do a similar recipe adding sultanas instead of nuts. As a special treat I soak the sultanas overnight in a little rum, its yummy, everyone loves it

          I'm still making this recipe every week and I'm not surprised it is so popular on My Dish. Blueberries work wonderfully with this recipe instead of the nuts.

          I made this with some trepidation, my family were coming for Sunday lunch and were tempted to taste it before lunch was served - they all loved it!!!           oops! - but one can actually use salted butter, just leave out the 1/2 a teaspoon of salt that the recipe asks for or the bread will definately taste too salty.

          Hi nannyannie - my other half made this for her uncle and aunt on Sunday as well! They do not often come over for tea so she wanted to impress. Needless to say it did not fail - her uncle coming back for seconds - there were also general votes of appreciation from all quarters of the table - kids included :-) Maureen's Banana Bread does it again!!!!

          now making this cake for the 3rd time, sometimes with nuts, sometimes without. depends on how i feel !! its so easy and delious. takes 10 mins to make if that and the oven does the rest. my family loves it .

          Hi, just wanted to add that I too made this today and it was gorgeous mmmmmm...
          I actually used a little less (10g less)butter, merely because it was difficult to mix in as I hadn't left it soften long enough, but it still tasted great!

          Great... I too like banana bread.if you have got cheap overripe bananas from supermarket or have bought some that are now overripe,you can peel and freeze them,even the odd one mounts up.They are great for mashing for this bread

          Tesco normally has over ripe banans in the reduced bit by the veggies. You can buy loads of banans for very little. Which is very useful if you like bananas and want to make banana bread.

          Di Dan - Yeh it’s really simple. Just remove the banana peel and, with the back of a fork, crush the banana until the pulp is achieved. It actually helps if the banana is very ripe / over ripe as the banana is then much softer and easier to crush. Also when you are stirring in the pulp to the rest of the mixture, before baking, don’t over-stir it, and just make sure the pulp is “folded” into the fixture.

        Ingredients

        • 50 g Chopped Nuts (optional)
        • 60 g Butter or Margarine
        • 225 g Banana Pulp
        • 2 (large) Eggs
        • ½ tsp Salt
        • ½ tsp Bicarb of Soda
        • 130 g Sugar
        • 2 tsp Baking Powder
        • 210 g Self Raising Flour

        Method

        1. 1. Sift together the dry ingredients.

        2. 2. Stir in the egg, banana pulp, butter and nuts. Do not overmix.

        3. 3. Pour the batter into a 100 millimeter by 200 millimeter greased and floured bread tin.

        4. 4. Bake for 50 mins at 160 celsius. You will know when it is done if a fork or knife is incerted into the bread - it it comes out c lean your bread is done!

        5. 5. Remove from the oven, allow to cool, remove from baking tin and serve.
