      Haha! I can imagine! They don't last long in my house either, and I imagine they won't last long at my student housing at Uni.They make for a great breakfast if you leave them without icing and warm them up slightly too ^^

    Ingredients

    • 125g Butter at room temperature
    • 250g Caster Sugar
    • 2 Eggs. lightly beaten
    • 1tsp Vanilla Extract
    • 250g Plain Flour Sieved
    • 2tsps Baking Powder
    • 4 Mashed Bananas
    • 175g 70% Cocoa Solids Chocolate
    •  
    • TOPPING
    •  chopped walnuts (optional)
    •  Chocolate Buttercream Icing (found here http://www.mydish.co.uk/recipe/7498/Chocolate%20Buttercream%20Icing

    Method

    1. 1. Preheat oven to 180C/160C(Fan)/350F/Gas Mark 4 and line a muffin tray with 12 cases.
    2. 2. Grind the chocolate with a blender of some sort to form bits slightly bigger than powder, but not big chunks.
    3. 3. Cream the butter and sugar until pale and smooth.
    4. 4. Add the eggs and vanilla extract, briefly beat before adding the flour and baking powder. Beat until the mixture is well combined.
    5. 5. Stir in the mashed bananas and the ground chocolate with a wooden spoon.
    6. 6. Fill the muffin cases to approx. 2/3 and bake in the oven for approx. 25minutes, although check regularly by using the 'clean skewer test'.
    7. 7. When cooked, leave to cool on the tray for a few minutes, before moving to a wire rack.
    8. 8. Once completely cool ice with the recipe linked to above.

      Ingredients

      •  
      • YOU WILL NEED FOR THE DRY MIX
      • 245 grams plain flour
      • 110 grams granulated sugar
      • 40 grams light brown sugar
      • 1 heaped teaspoon baking powder
      • ½ teaspoon baking soda
      • ¼ teaspoon salt
      • ½ teaspoon nutmeg. grated. grated we like to freshly grate the nutmeg

      • YOU WILL NEDD FOR THE WET MIX
      • 2 large eggs. lightly beaten
      • 115 grams butter. melted
      • 400 grams about 3 mashed ripe bananas
      • ½ teaspoon vanilla extract

      Method

      1. Preheat the oven to 350°f /180°c / Gasmark 5.
      2. In a large bowl combine the flour, sugars, nutmeg, baking powder, baking soda, salt, and just leave to one side.
      3. Place the egg, mashed bananas, melted butter and vanilla and in a mixing bowl and mix well together.
      4. With a wooden spoon, lightly fold the wet ingredients (banana mixture) into the dry ingredients until just combined and batter is thick and chunky. (The essential thing is not to over mix the batter, its not supposed to be smooth and over mixing the batter will make tough, rubbery muffins.
      5. Line a muffin tray with paper muffin cases, and then fill each case to just below the top with the muffin mixture you can top this with a slice of banana.
      6. Bake the muffins for 20-25 minutes. They are cooked when a skewer inserted into one and then removed comes out clean. Let cool slightly and Serve and Enjoy!

        Ingredients

        • 115 gram butter
        • 100gram brown sugar
        • 3 bananas
        • 115ml milk
        • 1 tsp vanilla extract
        • 2 eggs
        • 175gram wholemeal flour
        • 100gram all bran
        • 1tsp baking powder
        • 1tsp baking soda
        • 1tsp cinnamon
        • as req walnuts

        Method

        1. Blend everything together, then stir in all bran.
        2. Put into muffin cases and cook in the oven on about gas mark 4/5 for about 15 minutes.
