    Ingredients

    • 1 kg (2lb) Raw king prawns, shell-on
    • 225g (8oz) Chopped pawpaw
    • 2 TBSPS Chopped fresh mint
    •  Lime wedges
    •  Sliced chillies
    •  Marinade
    • 2 TBSPS Mild chilli powder
    • 2 TBSPS Chopped fresh oregano
    • 2 Cloves garlic, crushed
    • 2 Teaspoons Grated orange rind
    • 2 Teaspoons Grated lime rind
    • ¼ cup (55mL/2fl oz) Orange juice
    • ¼ cup (55mL/2fl oz) Lime juice

    Method

    1. 1) To make marinade, place chilli powder, oregano, garlic, orange and lime rinds and orange and lime juices in a bowl and mix to combine. Add prawns, toss, cover and marinate in the refrigerator for 1 hour.

    2. 2) Drain prawns and cook on a preheated hot char-grill or barbecue plate (griddle) for 1 minute each side or until they change colour.

    3. 3) Place pawpaw and mint in bowl and toss to combine. To serve, pile prawns onto serving plates, top with pawpaw mixture and accompany with lime wedges and slice chillies.

      Ingredients

      • 1 kg (2 lb) Uncooked king prawns, shelled and deveined, tail-on
      •  Chilli and herb marinade
      • 2 Fresh red chillies, chopped
      • 2 Clove garlic, crushed
      • 1 TBSP Chopped fresh oregano
      • 1 TBSP Chopped fresh parsley
      • ¼ cup (55mL/2 fl oz) Olive oil
      • 2 TBSPS Balsamic vinegar
      •  Freshly ground black pepper

      Method

      1. 1) Preheat barbecue to a medium heat.

      2. 2) To make marinade, place chillies, garlic, oregano, parsley, oil, vinegar and black pepper to taste in a bowl and mix to combine. Add prawns, toss to coat and marinade for 10 minutes.

      3. 3) Drain prawns and cook on oiled barbecue for 1-2 minutes each side or until prawns just change colour.

        • KING PRAWNS
        • hand full coriander leaves chopped
        • inch ginger. finely chopped
        • 3 tablespoons sesame oil
        • 3 cloves garlic cloves. crushed
        •  salt and freshly ground black pepper
        • 1 fresh chillis

        Method

        1. Add all the ingredients together in a tight sealed container. Close and give a good shake.
        2. Either skewer the prawns or use a grill. Cook till pink. Beautiful
