Ingredients
- 4tbs tomato sauce
- 1tbs brown sauce
- 1bls oil
- 1tbs worcester sauce
- 1-2 tsp garlic powder
Method
- Place all ingredients in a bowl and mix together to a loose paste.
- Taste and add any of the ingredients you think you might need a bit more of. This is all down to personal taste.
- Lemon, lime or vinegar may be added if you require a sharper taste or a tbs of honey if you like your marinade sweeter and stickier or pinch of chilli if a bit of heat is required.
- Marinade your meat/Fish for a minimum of 2 hours but preferably overnight. Works well in conventional oven as well as the barbecue.

Tips
I usually marinade any meat that I am going to cook on the BBQ overnight in the fridge so that it really give the meat time to absorb all the flavours from the meat.

- 25cl olive oil
- 12½ cl red wine vinegar
- 2 tblsp lemon juice
- 4 tblsp orange rind (grated)
- 1 onion chopped
- ½ tsp ground cinnamon
- ¼ tsp cloves (ground)
Method
- 1. Simply mix all the ingredients together and allow to stand for a while.
- 2. Then use it to marinade any lamb dish.
- 3. During the marinading process - usually 4 to 6 hours - make sure that the lamb is well covered with the marinade. In fact it is advisable to turn over the lamb during the marinading process to make sure it is well covered and the flavours are distributed evenly throughout the meat.

Hi Kenny,
I've never used this recipe, but I can imagine it is wonderful. Apparently beer makes an interesting addition to a batter for fish. It makes the batter lighter as well a giving it a great taste.
It's also good for a hair rinse!!! Or so I'vew heard. Haven't tried that though either.
Ingredients
- 12 fl oz Beer (Lager)
- 2 tsp Salt
- 1 tsp Ground Cayenne Pepper
- ½ cup Olive Oil
- 1 tsp Onion Powder
- 1 tsp Garlic Powder
- 2 tblsp Lemon Juice
- 1 tblsp Prepared Horseradish
- 1 tblsp Wine Vinegar
Method
- Mix all ingredients together in a large flat bowl. Put in the meat and make sure it is well coated in sauce. Leave the meat overnight in the fridge and cook when the fire is ready. This marinade is also great as a basting sauce for the meat while it cooks.
