    Ingredients

    • 125ml Tomato ketchup
    • 1 Large onion
    • 2 Large garlic cloves
    • 1tbsp Grainy mustard
    • 1tsp Worcestershire sauce

    Method

    1. Soften the onion and garlic for 2-3 minutes.

    2. Add the rest of the ingredients and bring to the boil. Simmer for 10 minutes until reduced into a thick sauce.

        Wow this sounds amazing - will have to try it out to experience a real Southern BBQ - how exciting!

      Ingredients

      • 2 cups Real Mayo
      • 1 cup Distilled White Vinegar
      • ½ cup apple juice
      • 2 tps prepared horseradish
      • 2tps ground black pepper
      • 2 tps fresh lemon juice
      • 1 tps sea salt
      • ½ tps cayenne papper
      • dash of paprika

      Method

      1. Just remember if it doesn't have Paprika, It isn't southern..

      2. Combine all ingredients in a bowl, mix well with spoon. Put into mason jar and store in fridge..

      3. Use as a marinade, dip or baste!

          Seem to remember you could buy a 'muslin bag'My old mum used to buy 'em in the '50s . Are the still available?

        Ingredients

        • For the muslin spice bag ----------------
        • 4g juniper berries
        • 4g cumin seeds
        • 4g fennel seeds
        • 4g coriander seeds
        • 8g black peppercorns
        • 6 cloves
        • small piece cinnamon,
        • 10 star anises
        • 4g  mustard powder
        • 2 red chillies, finely chopped
        • For the rest of the marinade ---------------
        • 150 ml vegetable oil
        • 3 red peppers, thinly sliced
        • 2 red onions, thinly sliced
        • 6 whole garlic cloves, split and crushed
        • 20g fresh ginger, finely chopped
        • large pinch cayenne pepper
        • 2g smoked paprika
        • 4g salt
        • 6 plum tomatoes, roughly chopped
        • 10 drops Tabasco®
        • 50g tomato paste
        • 100g honey
        • 150 ml lime juice
        • 250 ml Coca-Cola
        • 100 ml Worcestershire sauce
        • 100 ml soy sauce
        • 24g white wine vinegar
        • To serve ------------
        • 8 chicken drumsticks
        •  tomato ketchup (optional)

        Method

        1. 1. Place all the spices into a piece of muslin and tie together so they are secure.

        2. 2. Pour the oil into a medium-size pan, then add the peppers, onions, garlic, ginger, cayenne, paprika, salt, all the ground spices and the muslin bag. Cook on a medium heat, lid-on, for approximately 20 mins, until it has softened, and then add the tomatoes and Tabasco®. Cook for a further 15-20 mins.

        3. 3. Add the tomato paste, honey, lime juice, Coca-Cola, Worcestershire sauce, soy sauce and white wine vinegar, then reduce this on a medium heat until it becomes thick and jammy.

        4. 4. Remove the spice bag (this can be discarded), then transfer the marinade to a blender and purée til smooth. Pass the marinade through a fine sieve, then leave to cool.

        5. To marinate and cook

        6. 5. Put the chicken drumsticks in a shallow dish. Pour over the marinade, making sure all the drumsticks are coated. Turn occasionally.

        7. 6. When ready to eat, grill the drumsticks on the barbecue or bake in the oven on a medium heat, until the chicken is cooked through (about 20 minutes). Serve with
