    Ingredients

    • 1 Onion
    • 2tblspns Margarine
    • 1 Garlic clove
    • 2tblspns Vinegar
    • 1tblspn Brown Sugar
    • 1teaspn Salt
    • 1teaspn Mustard powder
    • ½teaspn Tabasco
    • ¼ cup Water
    • 1 cup Tomato ketchup

    Method

    1. Melt margarine in pan and add finely chopped Onion and garlic, fry gently for a few minutes until onion is transluscent. Add all the other ingredients and simmer very gently for about 15 minutes. The longer you simmer for the thicker it will get.

      • 2 oz. Butter
      • 1 large Onion
      • 1 tbsp. Tomato Paste
      • 2 tbsp. Vinegar
      • 2 tsp. Dry Mustard
      • 2 tbsp. Demerara Sugar
      • 2 tbsp. Worcestershire Sauce
      • ¼ pt. Water

      Method

      1. 1. Melt the butter and fry onion for 5
      2. minutes, or until soft.
      3. 2. Stir in the tomato paste and continue
      4. cooking for further 3 minutes.
      5. 3. Blend the remaining ingredients to a
      6. smooth cream and stir in the onion mixture
      7. 4. Return the sauce to the pan and simmer for
      8. a further 10 minutes.
      9. If liked thicken with cornflour.

        • YOU WILL NEED:
        • ½ cup Cider Vinegar
        • 1 cup Olive oil
        • ½ pound Butter
        • 1 tablespoon Freshly ground black pepper
        • 1 tablespoon Cayenne pepper
        • 3 Large Onions. chopped
        • 1 10-ounce bottle Worcestershire sauce
        • One 24-oz Bottle Tomato Ketchup
        • 1 tablespoon Sea Salt
        • 1 tablespoon Celery Salt
        • 1 teaspoon Garlic Salt
        • ½ cup Malt Vinegar

        Method

        1. Combine all the ingredients and simmer on very low heat for at least 20 minutes, this recipe makes sauce for about 25 lbs of meat, it does freeze nicely or just cut down on the quantities.
