    Ingredients

    • 220g plain flour
    • 3 tsp  baking powder
    • pinch salt
    • 1 egg
    • 150g brown sugar
    • 200 ml milk
    • 1 tsp vanilla essence
    • 175ml sunflower oil
    • 125 g blueberries

    Method

    1. Sieve together the flour, salt and baking powder. Using a mixer / blender, in a separate bowl, mix the egg, sugar, milk, vanilla essence and oil.

    2. Using a spatula, fold the wet mixture into the dry, mixing well (mixture will be quite sloppy)

    3. Add in blueberries.

    4. Fill muffin cases about two thirds with mixture and bake for approx 20 / 25 mins at 180c.

    5. Transfer to a wire rack to cool

      Ingredients

      •  
      • FOR THE TOPPING
      • 40g Plain White Flour
      • 13g Soft Brown Sugar
      • 25g Unsalted Butter
      •  
      • FOR THE MUFFINS
      • 250g Unsalted Butter, soft
      • 200g Fine Caster Sugar
      • 4 Eggs, and 1 extra yoke,lightly beaten
      • 250g Plain White Flour, sifted
      • 2 Tsp Baking Powder, sifted
      • 100g Blueberries

      Method

      1. 1. Preheat oven to 190C/375F (180C Fan Oven)

      2. 2. Beat butter and sugar until pale and fluffy

      3. 3. Add the egg mixture a little at a time, beat well before adding more

      4. 4. Gently mix in the flour and baking powder, add the blueberries

      5. 5. Place muffin cases into muffin tin and divide the dough between them (I made 15 from the above ingredients)

      6. 6. Sprinke the topping mixture over the dough, cook for approx 20-25 min until golden brown

          I have just made your blueberry muffin recipe - they were delicious (I ate 3 myself!) especially the cinnamon, crumbly topping - thanks

        Ingredients

        • YOU WILL NEED
        • 1 ½ cups plain flour
        • ¾ cup sugar
        • ½ teaspoon salt
        • 2 teaspoons baking powder
        • 1/3 cup vegetable oil
        • 1 egg
        • 1/3 cup milk
        • 1 cup fresh blueberries
        •  
        • FOR THE TOPPING
        • ½ cup sugar
        • 1/3 cup plain flour
        • ¼ cup butter. cubed
        • 1 ½ teaspoons ground cinnamon

        Method

        1. To make the topping, mix together ½-cup sugar, 1/3 cup flour, and ¼-cup butter, and 1½ teaspoons cinnamon, mix with a fork, and sprinkle over the muffins before baking.

        2. Preheat the oven to 400°f, 200°c, Gasmark 6, grease the muffin cups or line with muffin liners.

        3. Combine 1½ cups flour, ¾ cup sugar, salt and baking powder, place the vegetable oil into a 1 cup measuring cup, add the egg and enough milk to fill the cup.
        4. Mix this with flour mixture fold in blueberries fill the muffin cups right to the top, and sprinkle with crumb topping mixture.
        5. Bake for 20 to 25 minutes in the preheated oven, or until done, Serve and Enjoy!
