Ingredients
- 1lb dried fruit (mixed or whatever you prefer)
- 1 cup water
- 1 cup sugar (brown is best but white is fine)
- 4 oz butter (or marg)
- 2 eggs. beaten
- 2 cups SR flour
- 1 tsp mixed spice (optional)
- 1 tsp cinnamon (optional)
- 2 oz chopped nuts (optional)
- 4 oz chopped glace cherries (optional)
Method
- In a large saucepan place the fruit, water, sugar and margarine. Heat over a medium heat until the butter has melted. Leave to cool as long as possible as the liquid will be soaked up by the fruit making it all fat and juicy! When ready stir in the beaten eggs and the flour and mix well. At this point you can add any of the optional ingredients. If you are making the cake for Christmas then the spices and the cherries are a nice addition. I have even used this recipe for Wedding cakes (I am a qualified confectioner) and it is lovely as it keeps moist for so long.
- Pour mixture into a greased and floured/ lined 8" round tin or a loaf tin. Bake in a moderate oven (Gas mark 4) for approx. 1 1/2 hours until a knife comes out clean. If it is getting dark on top but it is not fully baked then cover with some tin foil. When baked leave to cool in the tin before turning out. Enjoy

- 3 Cups Dried Mixed Fruit
- 1 Cup Sugar
- 125 grams Marg/butter
- 1 Teaspoon Bi-Carb Soda
- 1 Teaspoon Mixed Spice
- 1½ Cups Cold Water
- 2 Eggs
- 2 cups Flour
- 1 tsp Baking Powder
Method
- Boil the first 6 ingedients gently for 25 minutes stirring well - remove from stove and leave to cool
- Add:
- Half a glass of Brandy (Optional),
- 2 well beaten eggs
- 2 cups flour
- 1 heaped teaspoon baking powder
- Mix well and place in a deep 6-8 inch baking tin and Bake in oven at 160C for one and a half hours.

i baked this cake but found it very crumbly although it was tasty, i don´t think i did anything wrong.Marie
Ingredients
- 8 oz dried.mixed fruit
- 3 oz granulated sugar
- 4 oz margarine or butter
- 1 tbsp golden syrup
- ½ pint water and milk mixed
- 10 oz plain flour
- pinch of salt
- 1 tsp baking powder
- ½ tsp bicarbonate of soda
- ½ tsp mixed spice
- ¼ tsp ground nutmeg
Method
- 1. Place the dried fruit,sugar,margarine or butter,syrup and mixed water and milk in a saucepan and bring to the boil.
- 2. Stir until the fat has melted,then pour into a mixing bowl and allow to become completely cold.
- 3. Set the oven to moderate,Gas Mark 4/350F/180C.
- 4. Sift the remaining dry ingredients together,then mix into the cooled fruit mixture.Stir well,then turn into the tin and bake for 1 1/2 hrs in the centre of the oven.
