    Tips

    For Spaghetti Bolognese - just serve with Spaghetti. For Stuffed Peppers - slice peppers in half vertically and deseed. Place in boiling water and blanch for 2 mins. Drain. Stir diced mozzarella into the sauce and divide between the peppers. Top with another slice of mozzarella and bake for 20 mins at 180, gas 5. For Daddys Chili - leave out the herbs and add 1 heaped tsp Chili powder and a small tin of kidney beans. For Mummys Sheperds Pie - leave out mushrooms and herbs and add sliced carrors and creamed potatoes.

    Ingredients

    • 1lb minced beef
    • 1 chopped onion
    • 8oz chopped mushrooms
    • 250g passata
    • 220g chopped tomatoes
    •  salt and pepper
    • 1 beef oxo cube
    •  sprinkle of Italian herbs

    Method

    1. Fry mince and onion in frying pan until brown,add mushrooms cook for further 5 mins, add oxo, salt and pepper and herbs.
    2. Add passata and chopped tomatoes and simmer for approx 1 hour or until mince cooked.

        @dilmunseal yes that's right you can add the balsamic vinigar at any time but probably best to leave it to the end and just add it before the final cooking stage

        Just making bolognese sauce from your recipe and I noticed that there is balsamic vinigar on the list, however is missing in the method so I ca only assume you put it in any where.

      Ingredients

      • 1 tsp Oregano
      • 1 tsp Basil
      • 1 garlic clove
      • 1 small onion
      • 1 tbsp Virgin olive oil
      • 450gms Minced beef/ meat
      • 1 can/ 5 fresh Tomatos chopped
      • 1 tbsp Tomato Paste
      • 2 tsp Balsamic Vinegar
      • pinch Salt
      • pinch Pepper
      • 1 tsp Mixed Herbs

      Method

      1. Using a thick based saucepan add the olive oil and allow it to warm up.

      2. Now add the chopped onion and allow those to begin to sizzle.

      3. Add the oregano, basil, garlic (crushed), mixed herbs (optional).

      4. Cook the onions until they become soft and shiny and just beginning to brown at the edges.

      5. Add mince, and break it down thoroughly (don’t leave any big lumps). At the same time mixing in with herbs and onion mixture.

      6. Once the mince start to go brown add the tomato paste.

      7. Then when meat is thoroughly brown through add the tomatoes and flavour with salt and pepper to your liking.

      8. Leave to simmer gently on a low heat for about 10-20 mins.

      9. Serve immediately together with the pasta of your choice or use in a pasta bake or lasagne.

        Ingredients

        • 2 tsp Oregano
        • to taste Salt and pepper
        • 4 tsp Red wine vinegar/balsamic
        • 2 tbsp Tomato puree
        • 400ml cartoon Tomato passat
        • 1lbs Steak mince
        • 2 tbsp extra/virgin olive oil
        • 3 Garlic cloves ( crushed)
        • 2 tsp basil
        • 2 tsp Mixed herbs
        • Just a splash about 4-5 tbsp Dry white wine

        Method

        1. Add oil to hot saucepan, add in oregano, basil, garlic and mixed herbs.

        2. Allow to heat up and infuse.

        3. Add mince, and mix in with the oil and herbs, make sure meat is broken down into smaller pieces as to cook flavour through the meat and avoid big clumps.

        4. Once some parts of the mince start to brown add tomato puree

        5. When meat is all brown add tomato passat, salt and pepper and splash of dry white wine

        6. Cook with lid on for 30-45 mins stirring occasionaly.
