    Ingredients

    • 55g/2oz butter
    • 55g/2oz plain flour
    • 570ml/1 pint milk
    • 55g/2oz caster sugar
    • 4 tbsp brandy

    Method

    1. Melt the butter and stir in the flour. Cook for 2 minutes and stir in the milk. Bring to the boil, stirring all the time, and simmer gently for 10 minutes.
    2. Stir in the brandy and the sugar and serve with Christmas pudding.

        I always mix the cornflower and sugar in a little milk into a paste then add the boiled milk to thicken. The brandy (or rum) can then be stirred in. What about adding a little butter?

      • ½ pint (300ml) Double Cream or Milk
      • ½ oz (12g) Cornflour
      • 1oz (25g) Sugar
      • 250ml Brandy

      Method

      1. Mix the double cream or milk and cornflour together. Put into a saucepan with the sugar and boil for five minutes, stirring all the time. Add the brandy.

          This recipe can also be made lowcarb if the sugar is substituted by a 'legal' artificial sweetener, so will be useful for a lowcarber like me!

          BTW did you really mean 8 hrs cooking time?

        • 150ml (5fl.oz) Double Cream
        • 3 Egg Yolks
        • 1 Tablespoon Demerara Sugar
        • 150ml (5fl.oz) Cognac

        Method

        1. 1. Mix the egg yolks with the cream then add the sugar and Cognac.
        2. 2. Beat well then place the bowl in a pan of hot water and stir until thickened.
