Ingredients
- 55g/2oz butter
- 55g/2oz plain flour
- 570ml/1 pint milk
- 55g/2oz caster sugar
- 4 tbsp brandy
Method
- Melt the butter and stir in the flour. Cook for 2 minutes and stir in the milk. Bring to the boil, stirring all the time, and simmer gently for 10 minutes.
- Stir in the brandy and the sugar and serve with Christmas pudding.

Ingredients
- ½ pint (300ml) Double Cream or Milk
- ½ oz (12g) Cornflour
- 1oz (25g) Sugar
- 250ml Brandy
Method
- Mix the double cream or milk and cornflour together. Put into a saucepan with the sugar and boil for five minutes, stirring all the time. Add the brandy.

Ingredients
- 150ml (5fl.oz) Double Cream
- 3 Egg Yolks
- 1 Tablespoon Demerara Sugar
- 150ml (5fl.oz) Cognac
Method
- 1. Mix the egg yolks with the cream then add the sugar and Cognac.
- 2. Beat well then place the bowl in a pan of hot water and stir until thickened.
