      I was going to make this pudding but I can't believe that the bread content is only 8 ozs!Can you please confirm the weight of the bread.Thanks,Bill

      my mum used to make bread pudding for my brother and myself.But sadly after she died I lost the recipe.This one seemed to be the same except I used milk inplace of water and lard not marg,wich is what mum used.You have my brothers approval and mine that this pudding taste just like "Mums" did.       This is very similar to a recipe my Dad use to use so i must try it , ir sounds lovely ..My Dad made the best bread pudding, sadly he is no longer here for me to ask him but i'm sure he used Lard instead of suet ...not healthy i know but back then we knew no better, but boy did it taste good.

      I always used to use up stale bread by making a bread pudding and used a recipe passed to me from my mum. I haven't made it for ages, couldn't find recipe so looked online. This is the one which is most similar, but instead of mixed spice I just used some nutmeg and lemon pee and melt the marg. Delicious cold as you say and even healthier with brown bread and sugar.

    Ingredients

    • 8oz Stale bread
    • ½ pint cold water
    • 3oz Sugar
    • 2 Eggs
    • 4oz Mixed dried fruit
    • 2 oz Suet (Veg works well)
    • 2tbs Mixed spice

    Method

    1. Break the bread into small chunks and cover with water, leave to soak for around 30-40 minutes. Drain the bread and squeeze out any excess water with your hands(this gets a little messy!)

    2. Transfer the bread to a mixing bowl and mix the bread with the rest of the ingredients.

    3. Pour into a greased 8" square baking tin and cook at 180C/gas 4 for 1.15 - 1.30 hrs or until firm to the touch and brown on top. If it looks like it is browning too quickly, add a piece of grease proof paper to the tin.

    4. Allow to cool for 30 mins or so in the tin before cutting into squares.

    5. This can be serve warm or cold. We always had ours cold.

    6. It's a great recipe to make with children, always lots of fun squishing the water from the bread.

        Glad you liked it, just made another one for me, can't resist breadpud. I find that I can make one and cut it up when cold and wrap it in foil then cling-film and put it in the freezer. Saves me eating it all in one go as much as I would like too :)

      Ingredients

      • 1 loaf of brown or white bread
      • 1 lb mixed fruit
      • 1 tub Mixed spice
      • 8 oz Caster sugar
      • 2 oz marg

      Method

      1. Soak the bread in water for about 30 mins.
      2. Squeeze the water out of the bread into a clean bowl
      3. Add the fruit, mixed spice and sugar
      4. Mix together with your hands into one big mess
      5. Put into a greased dish
      6. Add dollops of marg on the top of the mix
      7. Bake in the oven Gas 4 (350f 177f) for approx 1 1/2 hours
      8. Once out of the oven sprinkle some sugar on the top
      9. Enjoy

        • ½ lb Stale bread
        • 3ozs Sugar. granulated
        • 1 egg
        • 2ozs butter or marg
        • 2ozs currants
        • 2ozs raisins
        • ½ pt milk
        •  A little grated nutmeg
        •  A little grated lemon rind

        Method

        1. Soak the bread for 1 hour in some cold water, squeeze it, and mix it with the currants, raisins, sugar, lemon rind, nutmeg and melted fat, also the egg well beaten with the milk. Pour into a greased dish and bake for I hour 15 minutes 160c - 170c.
