    Description

    Quick, easy and cheap to make. Can be served as a starter or for lunch with fresh crusty bread!

    Method

    1. 1. Roughly chop onion and crush garlic.Separate broccoli into florets.
    2. 2. Heat butter in frying pan and fry gently until soft, add garlic and cook for1 minute.
    3. 3. Transfer onion and garlic into large saucepan,add broccoli florets,bayleaf and vegatable stock.Bring to boil,then simmer for 15 mins.
    4. 4. Remove from heat and crumble in stilton. Discard bayleaf.
    5. 5. Whizz in blender until smooth.
    6. 6. Transfer back to saucepan,check seasoning, add chilli
    7. flakes if using.
    8. 7. Reheat and add cream just before serving.
    9. 8. Great as a starter or serve with fresh crusty bread.
    10. ENJOY !!

    Tips

    Add chilli flakes to your taste if using.

      Well I have just made this and I used 370ml of Veg stock with 3 Veg Oxo cubes.
      I added 100g Stilton rather than 75g which gave it a much richer taste. I must say it's yummy and even lovelier when the cream went in. Served it with crusty bread. YUM YUM!! Thank you

    • 25g butter
    • 1 onion
    • 1 garlic clove
    • 500g broccoli
    • 2 tbs cream
    • 1 bayleaf
    • 75g stilton cheese
    •  salt and pepper
    •  Crushed Chili flakes (optional)
    • 2 Vegetable Stock Cubes desolved in 1 litre boiling water

      Description

      My husbands favourite soup! Serve with crusty bread. Yum!!

      Method

      1. 1. Melt butter in a pan, add onion and cook gently for 5 mins.

      2. 2. Add broccoli and chicken stock, bring to boil. Simmer for 5 mins or until broccoli is tender.

      3. 3. Blend then crumble in stilton and wizz with blender again for a few seconds just to break up cheese.

      4. 4. Stir in cream and heat very gently. Do not boil.

      5. Season and serve!!

        Description

        When there's a nip in the air Leone makes a fine soup to sit and savour and catch up on family news.

        Method

        1. Place onion, broccoli and vegetable stock in a saucepan. Bring to boil and simmer for about 15 minutes till vegetables are soft.
        2. Blend soup(off heat)
        3. Return to pan with milk and cornflour(blended with a little water)
        4. Bring to boil, stirring, then simmer gently for a minute or two.
        5. Stir in crumbled stilton to suit your taste, same with salt and pepper.
        6. Serve with a swirl of cream and Balmoral Bread.

          I tried this recipe out when my friend was comming for dinner.It went down a treat, even my 13yr old enjoyed it, and thats saying something! Takes little time and is wholesome and delicious.

        • ¾ pint Milk
        • 2 teaspoons Cornflour
        • About 3 oz Stilton Cheese

          Method

          1. 1. Toast the almond flakes in a dry frying pan over a low heat, turning often. Afterwards leave on a plate.

          2. 2. Put broccoli and water in a pan and bring to the boil.

          3. 3. Then Lower heat, simmer for 20-25 mins until soft.

          4. 4. Put the broccoli in a blender and afterwards put back in the saucepan

          5. 5. Add the milk

          6. 6. Once the soup is warm add the cornflour and blue stilton cheese and stir until melted.

          7. 7. When serving sprinkle on the tosted almonds
