      This is the best butter icing - used it on my son's birthday cake and it was delicious!!!!! :o)

      I made this recipe with caster sugar and I advice everybody against doing that. As Myrna Young wrote it is very important to use Icing Sugar!

    Ingredients

    • 80gm (3oz) Butter
    • 225gm (8oz) Icing Sugar
    • 3 dessertsp Milk

    Method

    1. Mix all together until creamy.
    2. This is enough to cover a 7" cake.
    3. Use double quantities except for the milk to cover a larger cake.

        Actually it depends if you want to put the icing in the middle - I tend to use double but it is a good base recipe because you can just adjust the quantities to suit your tastes but keep the ratios the same - good luck x

        I iced my husbands birthday cake with this - (Myrna's birthday cake recipe) and it was a real success - but I only had to use one and a bit tablespoons of milk to get the right consistency. Really tasty!!!!!!

        This was great, i substituted 30g of the sugar and added cocoa powder to make it chocolate, it wass yummy!!

      • few drops Vanilla essence

      Method

      1. This is SO easy to make. Sift icing sugar and add butter and milk and essence and blend - see I told you it was easy

        Ingredients

        • 400g butter
        • 300g caster sugar
        • 100ml water
        • 50g bitter chocolate
        • 1 tablespoon cocoa
        • 5 large eggs

        Method

        1. 1. Separate the eggs and put the egg whites into the mixing bowl.

        2. 2. Put 250g of sugar into a saucepan with the water and let it boil - but make sure it doesnt crystalise - boil till it gets to 244F

        3. 3. While it is boiling whisk the egg whites with the remailing 50g of sugar and a1 teaspoon of vanilla essence.

        4. 4. Slowly pour the syrup into the egg whites and continue to beat on high speed for about 5 mins then add the butter.

        5. 5. Melt the chocolate and leave to cool. Add this to the icing mixture with the cocoa for chocolate icing
