Ingredients
- 225g icing sugar
- 1 egg white
- 1 juice of lemon
- 2 drops glycerine
Method
- 1. Use a whisk to whisk the egg white. It should be stiff enough to turn the bowl upside down. (Whisk attachments to hand blenders seem to do this best).
- 2. Add the other ingredients and whisk until blended and stiff.
- 3. Do not be tempted to add any water etc or the icing won't dry on the cake properly.
- 4. Spread on the cake.

- 500g icing sugar. sifted
- 160g unsalted butter. at room temperature
- 50ml whole milk
- couple of drops vanilla extact
Method
- Beat icing sugar and butter together on medium/slow speed
- until well mixed.Combine milk and vanilla extract in a separate bowl then add to the butter mixture a couple of
- tbsps at a time with the mixer on slow.Once all the milk
- has been added turn mixer to high speed.Beat until frosting is light and fluffy at least 5 mins.The longer it is beaten the fluffier and lighter it becomes.

Ingredients
- BASIC BUTTERCREAM
- 225g Butter at room temperature
- 1tbsp Semi Skimmed Milk
- 1tsp Vanilla Extract
- 250g Icing Sugar Sieved
- CHOCOLATE
- 175g 70% Cocoa Solids Chocolate
Method
- 1. Place a saucepan of water on the hob to melt the chocolate, place a heatproof glass bowl over the simmering water and place the chocolate (broken into squares) in the bowl. Stir it occasionally. Once fully melted remove completely from the heat and the saucepan, and leave to cool slightly.
- 2. In a large bowl, beat the butter, sugar, milk, and vanilla extract together until smooth, you can use an electric whisk to speed along the process, although I prefer to use a spoon :)
- 3. Add the melted chocolate and beat again until thick and creamy. Continue to beat the mixture until you get a thick consistency.
