Tips
if you want to make it more interesting,prick and pop a cherry tomato into the centre of each muffin or use feta cheese for extra flavour.
Ingredients
- 1 cup self raising flour
- 1 cup Grated Courgette
- 1cup cheese. grated
- 1 egg
- ¼ cup olive oil
- ½ cup semi skinned milk
- ¼ cup Water
Method
- 1) heat oven to 200 degrees.
- 2) blend all the wet ingredients together with a wisk
- 3) stir in the self raising flour and blend till smooth.
- 4) stir in the cheese and courgette.
- 5) divide into 12 cases.
- 6) put in the oven for 20mins.
- 7) remove and leave to cool before serving.

- 4oz plain flour
- 4oz grated cheese
- 2tsp baking powder
- ¼tsp salt
- a little milk
Method
- 1) Mix all dry ingredients in bowl.
- 2) Add a little milk at a time until forms a dough.
- 3) Flour a baking sheet.
- 4) Roll dough into conker size balls and flatten slightly
- 5) Cook 200*c 7-10 min

Ingredients
- 50ML CHOPPED CHIVES
- 1 egg
- 200ml milk
- 250ml Cake Flour
- 10ml baking powder
- 2ml dry mustard
- 2ml cayenne pepper
- 375ml Grated Cheddar Cheese
- 50ml Chopped chives
Method
- 1. In a measuring jug, beat egg lightly with a fork, then fill jug with milk upto 250ml measure.
- 2. Sift dry ingredients together, add cheese and chives and mix in liquid until flour is moistened, batter should still be lumpy
- 3. Spoon into grease muffin tins, filling each two-thirds full.
- 4. Bake in a preheated oven at 200 C (400 F) for 15 minutes, until golden brown
