Ingredients
- 1 cup plain flour
- ¾ cup wholemeal flour
- 2 tbsp. caster sugar
- 4 ½ tsp. baking powder
- 2 cup chopped spinach (or baby spinach)
- 160 grams feta cheese cut into 1/2 inch (1cm) cubes
- ½ tsp nutmeg
- 1 egg lightly beaten
- ¾ cup milk
- 1/3 cup butter melted
Method
- Preheat the oven to 200°C . Prepare 12 regular muffin tins by brushing the bases with oil or line with paper cases.
- Sift the flour, nutmeg and baking powder in a bowl. Mix in the spinach, sugar and feta.
- In another bowl mix the egg, milk, and butter.
- Add the liquid ingredients to the dry ones and fold lightly with a fork. Do not over mix.. it just has to be wet mostly through.
- Spoon into muffin tins.
- Bake for approximately 15-20 minutes or until just starting to brown and a skewer or toothpick comes out clean.
- Place muffins on a wire rack to cool.

Ingredients
- 125g Self raising flour
- 2 tsp Baking powder
- 125g Cheddar Cheese . grated
- 1 Egg
- enough to make the egg up to 250ml milk
- 60ml Oil
- 60g Butter
- 1 tbsp Marmite
Method
- 1. Sieve the flour into a bowl
- 2. Add the cheese, egg, milk and oil and give it a good stir...it should look sloppy
- 3. Divide into 12 muffin cases and bake for 18-20 mins @ 200 degrees C
- 4. Melt the butter and marmite
- 5. Spoon the butter/marmite mixture over the top of the muffins when out of the oven

- 350g plain flour
- 1 tbsp baking powder
- 175g carrots,peeled and grated
- 50g parmesan cheese
- 2 eggs
- 250g tub buttermilk
- 100ml sunflower oil
Method
- pre heat the oven to 200oc/400of/gas 6, line a 12 hole muffin tray with paper muffin cases, sift the flour into a mixing bowl with the baking powder, stir in the grated carrot and parmesan cheese, whisk together the eggs, buttermilk and oil, make a well in the centre of the dry ingredients and add the buttermilk mixture, combine to form a soft consistency, spoon into the paper muffin cases two thirds full, bake for 25minutes until well risen and springy to the touch, allow to cool on a wire rack.
