      I'm so happy that you like my recipe, thanks.Apple butter is essentially a thicker and spicier version of applesauce, traditionally made by slow-cooking. Sliced or pureed apples cooked for up to 12 hours or more. Commercially produced apple butter is generally available in grocery stores.

    Ingredients

    • 3 cups rolled oats
    • 1/3 cup chopped walnuts or pecans
    • 1 cup raisins
    • 1 cup water
    • 1 1/2 cups sugar
    • 1/2 cup apple butter
    • 2 large eggs
    • 1/4 cup canola oil
    • 1 tsp vanilla extract
    • 2 cups all-purpose flour
    • 1 tsp baking soda
    • ½ tsp baking powder
    • ½ tsp salt
    • ½ tsp ground cinnamon
    • ½ tsp ground cloves

    Method

    1. 1. Preheat oven to 375°F. Line 2 baking sheets with parchment paper or coat with cooking spray.
    2. 2. Spread rolled oats and nuts on an ungreased baking sheet and toast until lightly browned, 5 to 7 minutes; set aside.
    3. 3. Combine raisins with water in a small saucepan. Bring to a simmer over low heat and cook until the raisins are plumped, about 10 minutes. Drain, discarding liquid, and set aside.
    4. 4. Beat sugar, apple butter, eggs, oil and vanilla in a large mixing bowl with an electric mixer until light and fluffy, about 5 minutes. Sift flour, baking soda, baking powder, salt, cinnamon and cloves into another bowl. Stir the flour mixture into the apple butter mixture with a spoon. Stir in the reserved oats, nuts and raisins; mix well.
    5. 5. Drop the dough by rounded teaspoonfuls, about 2 inches apart, onto the prepared baking sheets. Bake, one sheet at a time, until lightly browned, 8 to 10 minutes. Transfer cookies to racks and let cool.

      • 1 cup (2 sticks) salted butter. softened
      • 1 cup firmly packed brown sugar
      • ½ cup granulated sugar
      • 2 eggs
      • 1 teaspoons Vanilla Extract
      • 1 ½ cups all-purpose flour
      • 1 teaspoon baking soda
      • 1 teaspoon Cinnamon
      • ½ teaspoon salt (optional)
      • 3 cups quaker oats (quick)
      • 1 cup raisins (optional)

      Method

      1. Preheat oven to 350 f. Beat together butter and sugars until creamy. Add eggs and vanilla extract; beat well. Add combined flour, baking soda,cinnamon and salt; mix well. Slowly stir in oats. Drop by rounded tablespoon onto an ungreased cookie sheets. Bake 10 to 12 minutes or until golden brown. Cool 1 munute on sheet, remove to wire rack. Bar Cookies: Bake 30 to 35 minutes on ungreased 13X9 inch metal pan. High Altitude: increase flour to 1 1/4 cups.

        • 110g vegetable fat
        • 110g brown sugar. soft light
        • 1 egg beaten
        • 110g Flour (self raising)
        • 140g muesli
        •  oil for brushing

        Method

        1. Cream fat and sugar until light and fluffy. Beat in the egg and stir in remaining ingredients. Put teaspoons of mixture on to greased baking sheets, allowing plenty of room. Bake at 190degrees (Gas 5) for 15 mins. Allow to cool on a rack.
