Ingredients
- CHICKEN BURGER
- 3-4 chicken breasts (or about 500g turkey mince)
- ½ tsp salt
- ½ cup breadcrumbs
- 1 egg
- FOR BREADING THE BURGERS
- plate of flour
- bowl of eggs beaten
- plate of breadcrumbs
- ½ tsp paprika
- ½ tsp garlic powder
- salt and pepper
- TO SERVE
- 4 sesame seed buns
- iceberg lettuce
- tomatoes
- mayonnaise
Method
- Put chicken breasts and salt in food processor, pulse a few times.
- Add in breadcrumbs and egg, pulse a few times again. (May not need the egg if its quite a wet mixture)
- Make into burger shapes.
- Mix paprika, garlic powder, salt and pepper with the breadcrumbs for covering.
- Dip burgers into flour, then egg, then breadcrumbs.
- Shallow fry in oil for about 15 minutes.
- Cut sesame seed buns open and put burger in then put lettuce, sliced tomato and mayonnaise on top.

- BURGER PATTIES
- 2 Chicken breasts. boneless and skinless
- ½ A medium onion
- 1 Clove of Garlic
- ½ A carrot
- ½ Teaspoon paprika
- 2 Tbs Chopped fresh parsley or 1 Tbs of dried parsley
- Generous pinch Salt
- pepper to taste
- ¾ Cup Breadcrumbs
- 1 Egg
- BURGERS
- 4 Bread rolls
- Low fat cheese
- Sliced tomato
- Lettuce and/or Rocket
- Low fat mayonnaise
- Ketchup
Method
- Roughly chop chicken, onion, garlic, carrot and put in blender/food processor with egg, salt, pepper, paprika and parsley.
- Blend and add breadcrumbs gradually until mix is of a consistency where you can ball it up and squash it into a pattie with your hands.
- Cook under grill or fry in a non-stick pan for approximately 10 mins. Use cooking spray if you are concerned about sticking. The mix should make 4 generous sized patties. Add cheese when you're nearly done cooking so it melts on top of the pattie.
- Serve the patties in rolls with salad, mayo, ketchup or chutney.

- 4 skinless chicken breasts
- 2 tbsp olive oil
- 4 rashers smoked bacon
- 2 avocados
- 4 ciabatta rolls. split
- 4 thin slices of your favourite cheese
- 4 small handfuls baby spinach leaves
- Mayonnaise. to serve (optional)
- FOR THE CAJUN SEASONING
- 1 tbsp ground cumin
- 1 tbsp ground coriander
- 1 tbsp paprika
Method
- Mix the cajun seasoning ingredients together with a good grinding of black pepper and a sprinkling of salt, then set aside in a large dish.
- Heat grill to high. On a board, flatten the chicken lightly, then drizzle half the oil over it and toss in the seasoning until completely coated.
- Heat the remaining oil in a large frying pan, sizzle the chicken for five minutes on each side until firm, push to one side of the pan, then fry the bacon for a few minutes until cooked.
- While the chicken is cooking, halve, stone, peel and slice the avocados, and toast the cut sides of the buns. Cover the tops of the buns with cheese, then grill until melted.
- To assemble the burgers, spread the buns with mayonnaise, if you want, top with a handful of spinach, then a rasher of bacon. To keep the avocado in place, slice the chicken, then alternate between a slice of chicken and avocado. Top with the bun, press down lightly and serve.

I'm sure chicken or turkey mince would work absolutely fine...as for cleaning, i couldn't live without my dishwasher!

Looks easy enough, don't fancy cleaning the food processor after though! Would it work as well with chicken mince? Thanks for the recipe xXx
