Cook the kebabs on the bbq (or in winter under the grill!) the trick is too ensure they are not pink in the middle but also not overcooked so they go dry - I tend to cook them for about 10 mins turning halfway through.
Ingredients
- 6 chicken fillets
- olive oil
- FOR THE SATAY SAUCE
- 2 heaped tbsp Chunky peanut butter
- 1 tbsp lime juice
- 1 tsp ground ginger
- 1 green birds eye chilli
- 2 tbsp olive oil
- water to suit
- pinch of chopped corriander
- 1 clove garlic
Method
- Cut the chicken fillets into cubes and put 4-5 cubes on a skewer - drizzle with a little olive oil.
- For the Satay
- Put all the ingredients in a blender and blend. Add a little water to get the desired consistency.

- 2 Green Peppers
- 1lb Cherry Tomatoes
- ½ lb Button Mushrooms
- 6 fl oz Olive oil
- 4 fl oz Light soy sauce
- 4 tbsp Red wine vinegar
- 4 Chicken fillets
Method
- 1. If you are using wooden skewers you will need about 12 if small or 8 if big which should be soaked in warm water before you use them for about 30 mins
- 2. Make the marinade by putting oil, soy sauce, vinegar and a bit of black pepper to taste in a large bowl.
- 3. Cut chicken into chunks and put in marinade
- 4. Cover and put in fridge for about 15 mins
- 5. Cut green pepper into chunks ready to put on skewers
- 6. Take chicken out of fridge and put on skewer with green pepper and mushrooms
- 7. Put on bar-b-q and cook using marinade to baste

- 1¼ lb Chicken breast
- Finely grated rind of one lime
- 1tbsp Rum
- 1tbsp Light muscovado sugar
- 1tsp Ground cinnamon
- 2 Mangoe,peeled and cubed
- Rice and salad to serve
Method
- 1)cut the chicken breast into bite-sized chunks and place in a bowl with the grated lime rind and juice,rum,sugar and cinnamon,toss well,cover and leave to marinate for 1,hour.
- 2)save the juice and thread the chicken on to four wooden skewers,alternating with mango cubes.
- 3)cook the skewers under a hot grill or barbeque for 8-10 minutes,turning occasionally asndbasting with the reserved juices,until the chicken is tender and golden brown.serve at once with rice and salad.
