    Method

    1. 1. Prepare the garlic butter by putting all the ingredients in to a small bowl and mixing well. Set aside for using later.

    2. 2. Slice the chicken breasts in half horizontally without cutting all the way through, open each breast like a book.

    3. 3. Spread a heaped teaspoon of the garlic butter on to the inside of each breast leaving about 1cm around the edge to prevent the butter squeezing out when the breasts are folded back together.

    4. 4. Fold each breast back together and use fingers to press the edges down ensuring the breasts don't come apart.

    5. 5. Cover each breast firstly by coating in flour, then in egg, then in the breadcrumbs (breadcrumbs if not shop bought are made by toasting the bread and by either grating or blending the toast to create a consistent crumb).

    6. 6. When each breast is fully coated, place them on a greased baking tray for 30 minutes at 200c.

    7. Tip: Serve with potatoes of any kind and vegetables/salad.

      A very delicious meal. Toasting the breadcrumbs was definitely a good idea!

    • 5 garlic cloves. finely chopped
    • 2 tsp lemon juice (fresh/bottled)
    • 1 ½ tsp mixed herbs (fresh/dried)
    • 4 heaped tsp butter. softened

      Method

      1. 1. Preheat the oven to gas mark 7 /220°. Cut a deep slit lengthways in each chicken breast.

      2. 2. In a bowl mix together the cream cheese, fresh breadcrumbs, egg yolk, garlic and chopped parsley and season with ground black pepper. Spoon the mixture into the slits in the chicken breasts then, using wooden cocktail sticks, secure the pockets.

      3. 3. Lightly beat the egg white. Spread the dried breadcrumbs and paprika on a flat plate. Dip each chicken breast in a little plain white flour. Brush with egg white, then press on the breadcrumbs until the chicken is well coated.

      4. 4. Place the chicken on a baking tray and bake in the oven for 25 minutes. Serve with a green salad.

        Description

        this is such a tasty meal ,great for all the family,a true friday night tea !

        Method

        1. get a small bowl and mix everything needed for the garlic butter place in fridge.cut a pocket into the chicken breasts place a tablespoon of garlic butter in and put in the fridge.get four large slices of bread and toast until a DARK brown get a knife and a grater and grate into a bowl the softer the bread the harder it is.whisk an egg in a cup.put the flour in with the breadcrumbs .get the chiken out of the fridge and individually dip in the egg and then the flour/breadcrumbs ,then place on to baking tray do this for each chicken breast.cook for 30mins until the chicken is golden brown.serve with salad and potatoes.

        Tips

        if the garlic butter is seaping out but a coktail stick though it . also when its cooked put a biut of leftover garlic butter in them to keep them nice and moist.
