Chicken noodle soup recipes
Ingredients
- 7 oz (200 g) minced chicken
- 2 cups (450 ml) chicken stock
- 1 cup (100 g) cooked noodles
- 1 tbsp fish sauce
- 1 tbsp soy sauce
- 2 tsp lime juice
- 1 tbsp garlic, chopped
- 1 tbsp onion, chopped
- 1 tbsp red chilli, chopped
- a handful fresh parsley, chopped
- 1 tsp dried chilli flakes
- 2 tbsp vegetable oil
Method
- Heat the vegetable oil. Gently fry the chopped garlic, celery stalk and onion for 1 minute. Add the chicken stock. Bring it to a boil and turn the heat low again to a simmer. Add the chopped chilli and minced chicken to the stock. Cook until the chicken is tender. Break up any big mince lumps with a fork. Stir in the cooked noodles. Let the soup simmer for 1 minutes. Stir in the fish sauce, soy sauce and lime juice. Check the seasoning and add more to taste if necessary. Simmer the noodle soup for another minute. Scoop the soup in bowls, garnish with the dried chilli flakes and fresh parsley. Serve immediately.

- 2pts chicken stock (or water and 2 stock cubes)
- 1 spring onions finely chopped
- 1 tbls soy sauce
- 100g chopped cooked chicken
- 1 block dried noodles
- 1 tsp toasted sesame oil (optional)
- salt to taste
- pepper to taste
Method
- Put stock in pot and bring to simmer, add rest of ingredients.

- 1 Whole chicken guts and neck and other ickiness removed
- To taste Bay leaves
- To taste Thyme
- To taste Salt

Method
- Put the chicken in a big pot and fill with water until the whole chicken is just covered. Add seasonings. Bring to a boil and boil for about 20-30 minutes, until the chicken is no longer pink. Remove the chicken and let cool until you can pull the meat from the bones without burning yourself. Also remove the bay leaves. Bring the broth back to a boil and add a bag of egg noodles. Cook for a few minutes, then add a bit of flour to thicken the broth. Add the chicken just before the noodles finish cooking.
