Ingredients
- 6 Chicken breasts boned and skinned
- 250ml Chicken st°Ck
- 1 Onion- skinned and roughly chopped
- 500g dried vaccum packed dates-stoneless
- 250ml Red wine
- 2 lemons-cut in slices
- to taste salt and fresh ground pepper
- 3 tablespoons toasted flaked almonds
- 300ml Hot chicken st°Ck
- 500g Couscous
- 2 tablespoons Extra virgin olive oil
Method
- Method
- 1) Pre-heat the oven to 200 C /400ºF/ Gas mark 6.
- 2) Place the sliced lemon and chopped onion in a roasting tin large enough for 6 chicken breasts. Sit the chicken breasts on top.
- 3) Pour the chicken stock and red wine over the chicken.
- 4) Empty dates into the roasting tin, season with salt and freshly ground black pepper.
- 5) Cover with aluminium foil and roast for 1 hour.
- 6) To toast the almonds, place in a dry frying pan and cook until golden. Shake the pan from time to time so that they are golden all over. Remove and set aside until required.
- 7) To make the cous cous put it in a serving dish. Pour hot stock over the grains and then immediately cover with plastic wrap. Season with salt and freshly ground black pepper and drizzle over the olive oil.
- 8) Serve the chicken on a bed of couscous and garnished with toasted almonds.

Ingredients
- Whole chicken cut into pieces
- ½ jar Apricot jam
- 1 sachet of concentrate onion gravy
- 1 pint Water
- 2 tbsp fruit chutney
- small packet dried apricots roughly chopped
- 1 tbsp cornflour
Method
- Cut whole chicken into pieces and place in a roasting pan, quite close together.
- In a sepearat saucepan place all the ingredients except the dried apricots and bring to the boil.
- After about 2 minutes reduce the heat to a simmer, stirring constantly.
- Place dried apricots on the chicken pieces and pour over the sauce.
- Bake in oven at 190 degrees for about 1.1/2 - 2 hours, or until golden brown.
- Serve with rice, salad and steamed broccoli.

- 1 packet french onion soup
- 1 litre apricot or peach juice
- 1 tin apricots
Method
- place chicken in an ovenproof dish. Add the french onion soup and juice together and then add to the dish and cook on gas mark 5 for 1 hour. Add the tin of apricots and cook for a further 10 minutes until done. With this recipe you can either have mashed potatoes and vegetables or you can have long grain rice.
